Dinner last night was late, but tasty. When The Pedant and I got home from the Teet we walked into our apartment (which we hadn't been in for a while) and it smelled like a fire. Which was odd because non of our appliances were on. We called maintenance and after some time they pinpointed the stench to the apartment NINE floors below us who left something on the stove and then went out. The burning smell permeated through the vent. You can even still smell it this morning. We didn't want to cook until we knew the source, in case there was something odd. Once we did cook it turned out really great. We used our electric grill and took advantage of the nice weather. TP marinated some chicken breast for about 36 hours in Soy Vey. We bought some cute, little sweet peppers, baby bella mushrooms, an onion, a green bell pepper, yellow squash and tempeh (for me) and put them on skewers with some of the Soy Vey. It came out really well. We made some boil-in-bag brown rice (since we started Passover cleaning last week we found we have A LOT of rice, so after Passover, we'll be making LOTS of rice...) and now have some great lunches.

Hearty Stew!
Another Vegetarian Times Win: Mushroom Tempeh Something with Lager (I can't remember the exact title!). Basically, a delicious stew with cremini and shiitake mushrooms, tempeh toasted in oil and given a bit of flavor with soy sauce, lager and time. It was really tasty. A bit bitter for my tastes, but mixed with the brown rice we made it was excellent. Hearty, thick, comforting. And after going to work in snowstorm yesterday, just what The Pedant and I needed!

Tempeh!
My post on Friday alluded to our dinner Friday night, Tempeh au Vin. Well, the outcome was excellent. Granted I can't compare it to Coq a Vin since I doubt I've ever had it (although The Pedant can address it; his comments about the time he had it in France always include the words "so tasty," "really great," "amazing") but this was good. I mean, how could it not be?! The recipe was pretty simple:
Saute 3 leeks and 2 onions chunked in some EVOO. Let them get brown and delicious looking. Add in 1 lb. mushrooms halved, let them get tasty looking. Add in carrot slices, some flour, 4 smokey tempeh strips (we used Light Life Bacon which didn't add as much as it could have - next time we may just use liquid smoke) and 8 oz cubed tempeh. Then pour in some water and a bottle of beaujolais (good thing we can get some for under $10 at costco!) and let it cook for a while getting yummy. The recipe calls for spelt berries (since it's a hippie mag) but we substituted egg noodles. It was just wonderful. Also, I felt justified using our (expensive, but worth it) french oven.
